During her time at the Hotelschool and the 3-star restaurant De Librije, Maartje got inspired by a new view on food, from the kitchen perspective. As ‘Hotello of the Year’, part of the sustainable young top 100 (DJ100), Chief Flavor and owner of catering company The Food Line-up, she serves daily change on a large scale. Always different than the usual, with a nice bit of depth to it.
